The White Matsutake or Pine Mushroom is the king of mushroom flavors. Its spicy and aromatic fragrance, its white flesh, and its magnificently unique flavor rank matsutake among the top ten of any gourmet food list. The highly treasured White Matsutake adds a uniquely pungent flavor to any meat or vegetable dish.
Matsutake are an excellent source of protein, fibre, minerals, and vitamins. Wild edible mushrooms have anti-inflammatory and cholesterol-reducing properties. They enhance the immune system and they assist in reducing blood pressure and blood sugar levels.
We wild-harvest our matsutake from late-July through August in northern Saskatchewan.
